Asparagus strudel
A special way of preparing South Tyrolean asparagus is the asparagus strudel.
In spring, when the asparagus is harvested in South Tyrol, you can savour all kinds of asparagus delicacies in the asparagus restaurants and many other inns in South Tyrol. Here we present our recipe for a delicious asparagus strudel.
Thsi delicacy is frequently served during the popular asparagus period in spring.

Ingredients for 4 people:
- 300 g puff pastry or 400 g shortcrust pastry
- 100 g ham (not smoked)
- 200 g spinach leaves
- 100 g Emmental cheese
- 400 g Terlan asparagus, peeled and pre-cooked
- 1 egg yolk to brush
Preparation:
Roll out the pastry, place the ham, cheese and spinach leaves on top one after the other, place the pre-cooked asparagus in the centre, fold in the strudel and brush with egg yolk.
Bake in a preheated oven for 10 to 20 minutes at a high heat (max. 250 °C) and serve with hollandaise sauce.
