Brown dandelion honey
A recipe for a wonderful spring!
In contrast to bee honey, dandelion honey has any animal components and is vegan. However, it tastes like "real" honey and can be prepared in a very easy way.
The mix of sugar and dandelion aroma in the form of a syrup is prepared in spring and can be enjoyed the whole year round. The dandelion flowers are collected under the sun. Effort seems being high but it is absolutely worth it. When collecting dandelion flowers, you should take care that the field is not near a road, that you only collect young and juicy flowers and that you do not remove the entire plant.
The recipe:
Ingredients:
- 1.5 kg cane sugar
- 1 l of water
- 600 gr of dandelion bloom
- 2 lemons
Preparation:
Pick the dandelions, pull off all the dandelion petals and put them in a pot with the water and lemon slices from 1 and a half lemon. Simmer for about 30 minutes. Let the mixture sit by the side of the stove for 8 hours. Strain to separate the petals from the juice. Return the juice to the pot and bring to a simmer. Slowly add the sugar and simmer until desired thickness (takes about 4 hours). Put all in different and clean glasses.
