Pumpkin gnocchi with speck
With the autumn, one of the most popular vegetable in South Tyrol is certainly the pumpkin, that are ideal for a lot of recipes!
Here is a very simple recipe, we have already experienced, try it!
Ingredients for 4:
- 300 g pumpkin
- 2 eggs
- 350 g of flour
- ½ cup water
- Salt and pepper
- 120 g of leek
- 1 red pepper
- 60 g butter
- 100 g speck
- 2/3 tablespoons parmesan cheese
Cook the pumpkin, once cooked, mix with the flour, 2 eggs, water, salt and pepper. Form the gnocchi, and cook them in boiling water.
Once the dumplings are floating, they are cooked.
In a pot, cook the leek with the butter and add the speck cut into thin strips. Once the bacon has been flavoured, add the gnocchi. Turn off the fire and add the parmesan.
Preparation: 45 minutes
