Mushroom soufflé

A delicious recipe from South Tyrol

Mushroom Soufflé for 4 people

  • 30 g butter
  • 40 g flour
  • 125 g milk
  • 150 g different mushrooms
  • 90 g Parmigiano cheese
  • 3 yolks
  • 3 egg whites
  • Salt, pepper, breadcrumbs


Smelt the butter and give the flour to it. Pour the hot milk and melt a béchamel. Then take the mushrooms, cut them into little cubes and sear them and flavour them with salt, pepper, garlic and parsley. Put the mushrooms, the yolks and the parmigiano cheese into the béchamel and melt it well. Take some small baking pans, butter them and put breadcrumb in it. Bang the egg whites and fold them slowly in the dough. Then put all together in the baking pans and bake them for 35 minutes in the water bath at 150°.

Tip: before you serve the soufflé put hot butter on it and some chive.
