Strawberry almond pie
The pie with almonds and strawberries is a sweet delicacy from South Tyrol, which is in particular in summer very popular. The pie tastes wonderful with a cup of coffee, tea or a glass of South Tyrolean apple juice.
- 400 g flour
- 125 g chopped almonds
- 250 g sugar
- 150 g butter
- 2 eggs
- 1 teaspoon cinnamon
- ½ teaspoon ground cloves
- 1 packet baking powder
- ½ ampoule almond flavouring
- 1 teaspoon dark cocoa powder
- the grated skin of a half organic lemon
- a pinch of allspice
- For the topping: 650 g strawberry jam and icing sugar
Mix the flour with sugar, cocoa, cinnamon, ground cloves and baking powder in a big bowl. Add the chopped almonds and the grated lemon skin. Knead the ingredients with butter and eggs until it becomes a smooth pastry. Cover the pastry and let it rest in the fridge for half an hour.
Take 2/3 of the pastry and roll it out till it is one cm thick. Grease a baking form with butter and flour it, so that the finished pie does not stick to the baking form. Put the pastry in the baking form and spread the jam (best suited for this is strawberry jam from Martell valley) on it, but leave an edge blank. Roll the rest of the pastry out, cut it in regular stripes and put them grid shaped as decoration on the pie.
Bake the pie in the oven for 50-60 minutes at 180 degrees. Let it cool down, then sprinkle icing sugar on the Strawberry Almond Pie and enjoy it!
