Buchteln
Soft and delicious! Buchteln are a great South Tyrolean dessert and afternoon snack.
"Buchteln" are a typical dish in the Bohemian cuisine, but have found their place in the Saxon, Swabian, Bavarian, Austrian as well as in the South Tyrolean cuisine too.
In each bakery and nearly in all restaurants and mountain huts in South Tyrol, you can order them. "Buchteln" are made of yeast dough and are usually filled with apricot jam. They are baked together in a baking dish in the oven and served warm with icing sugar.
Moreover, a delicious warm vanilla sauce is served with them.
Our recipe:
Ingredients:
- 500 gr flour
- 30 gr baking powder
- 150 gr butter
- 1 egg
- 3 yolks
- 60 gr sugar
- 1 cup of milk (warm)
- salt, lemon
- a little rum
Melt the baking powder in the warm milk with a little sugar and cook for 15 minutes.
Add the flour and let the dough swell. Then add the left over ingredients and blend until the dough does not stick anymore to the bin.
Let it swell again. Strain the dough and make circles out of it. Spread jam on top of each one and close them like balls. Spread with butter.
Now cook the little balls bain-marie for 10 minutes, then add to the water some ice cubes and continue to cook for another 20 minutes.
