South Tyrolean Speck with porcini mushrooms

Ingredients for 4 people:
- 200 g / 7 oz sliced Speck Alto Adige PGI,
- 1 fresh porcini mushroom,
- 20 g / oz arugula,
- 40 g / 1.4 oz parmesan cheese shavings,
- salt and pepper,
- 4 tbsp extra virgin olive oil,
- 2 tbsp traditional Modena balsamic vinegar.
Arrange Speck slices on a serving plate. Slice mushroom with a truffle slicer and arrange on top of Speck.
Cover with washed and dried arugula and Parmesan shavings.
Dress with a mixture of salt, pepper, oil and balsamic vinegar.
